Roasted Crunchy Chickpeas

 

I love a good nutrition packed snack that I can take with me on the go! These homemade roasted chickpeas makes the perfect snack! The trick to getting the perfect crunchy chickpeas is really starting off with dried chickpeas and not canned chickpeas, but don’t think its such a complicated process, because its really easy! See below for this easy and delicious recipe!

1 cup dried chickpeas
1/4 cup olive oil
1 tsp garlic powder
1 tsp smoked paprika
1 tsp cumin
1/4 tsp salt
1/2 tsp chilli flakes

Directions:
Submerge the dried chickpeas in water and soak overnight,then rinse and drain. Then fill a pot with water making sure to fully cover the chickpeas and cook them on  for about 35 mins with a pinch of sea salt until the chickpeas taste al dente. Once the chickpeas are finished, drain and cool them. Make your mixture of the oil and spices and whisk together. Then coat the chickpeas well and place on a baking pan and bake on 400*F for about 35 mins depending on your oven, until the chickpeas are golden brown and crisp.
Serve warm or keep them in an airtight bag for the perfect on the go snack!

Sauteèd Bok Choy

Recipe:
2lbs baby bok choy
3 garlic cloves
1 oz fresh ginger
1 tbsp olive oil
2-3 Tbsp Braggs amino acids
Directions:
Clean the bok choy well, then in a pan heat up the olive oil and add in the garlic and cook for 1-2 minutes. Add the ginger with the bok choy. Stir until the bok choy leaves start turning bright green and the steams are wilting. Then add the bragg’s in the pan, mix it for about a minute and then your ready to serve!

Chocolate Banana Cake

 

For all you sweet tooth lovers this banana cake makes the perfect breakfast and dessert option to satisfy all your cravings!

Recipe:
2 medium bananas
1 egg( can replace with 1 flax egg 1 tbsp flax 3 tbsp water)
1/3 cup cocoa powder
1 cup oats
1 tsp baking soda
1.4 cup maple syrup
1 tsp vanilla extract
1 tbsp coconut oil
1/4 tsp salt
1/2 cup chocolate chips

Directions: In large bowl or a food processor mash the bananas and then add your remaining ingredients and mix well until everything is well incorporated. Then fold in your chocolate chips I did 1/4 cup in the batter and 1/4 cup on top.

Grease a loaf pan and Bake on 350*F for about 30 mins (check the center with a toothpick to make sure it’s fully baked). Let it cool and serve! Enjoy!

 

Chocolate Avocado Moose

This chocolate Moose is probably my favorite dessert and breakfast! Creamy, rich and just enough sweetness!
Chocolate Avocado Moose:
1 ripe avocado
1/4 cup cocoa powder
1/4 cup almond milk
2 tbsp pure maple syrup

Directions:
Place everything in the food processor and mix until everything is incorporated and the texture is creamy! Serve immediately or chill in the fridge! Topped it with coconut flakes and berries

Almond Joy Bites

Growing up my go to candy bar was Almond Joy! I love the almond, chocolate and coconut combo! I recreated the recipe into something healthy and nutritious that your body will thank you for!
Recipe:
1 cup raw almonds
1/2 cup coconut flakes, unsweetened
1/4 cup cocoa powder
1/3 honey
1 tsp vanilla extract
almond joy bites
Directions: In a food processor first process the almonds. Then add your remaining ingredients and mix until it form a dough. Then roll them into balls and freeze and ready to serve! Simple, delicious and easy! Enjoy!

Honey-Tahini Granola

Are you someone who loves cereal but doesn’t want to consume all those sugars in cereal?! Don’t worry if you answered yes, because almost everyone will answer that. This recipe is great  especially when you are trying to stay off refined sugars ! This granola can be used as a topping for basically anything or as cereal!

Recipe:
1 Cup oats
3 Tbsp coconut flakes
1/4 cup honey
1/4 cup tahini
1/4 cup almonds

Directions: In a large mixing bowl mix everything together , bake in the oven on 350*F for 35-40 mins until the granola is nice and crispy. Mix between baking for even cooking. Cool and enjoy!
